Macedonian Pita
Background
Macedonian Pita, also known as "Burek" or "Pita", is a beloved pastry in the Balkan region. Known for its flakey, crispy layers, and savory fillings, it is a staple food that is enjoyed for breakfast, lunch, or dinner. Ingredients
- Flour - 500g
- Water - 250ml
- Olive Oil - 30ml
- Salt - 1 tsp
- Feta Cheese - 300g
- Egg - 1
- Yogurt - 100ml
- Baking Soda - 1 tsp
- Butter - 50g
Preparation
Begin by preparing the dough. In a large bowl, combine the flour and salt. Gradually add water and olive oil, mixing continuously until a smooth dough forms. Knead for about 10 minutes until the dough is soft but not sticky. Cover with a cloth and let rest for 30 minutes.
While the dough is resting, prepare the filling. In a separate bowl, crumble the feta cheese. Beat the egg and mix with the cheese. Add the yogurt and baking soda to the mixture, stirring until well combined.
Preheat the oven to 200°C (392°F) and grease a baking pan with butter.
Cooking Process
Once the dough is rested, divide it into 4 equal parts. Roll each part into a thin sheet. Use a rolling pin dusted with flour to avoid sticking. Patience is key, as the sheets should be almost transparent.
Layer the sheets in the prepared baking pan, brushing each layer with olive oil. Spread a portion of the filling over each sheet, ensuring even coverage. Repeat the process, alternating layers of dough and filling. The top layer should be a sheet of dough brushed with oil.
Before placing in the oven, cut the pita into serving pieces, ensuring the knife reaches the bottom of the pan.
Bake for about 45 minutes until the top is golden brown and crispy. Keep an eye on the pita as cooking time may vary depending on your oven.
Once baked, remove from the oven and let it cool slightly before serving.
