Mâche Savoyarde
Description and History
Mâche Savoyarde is a traditional French salad hailing from the region of Savoy in the French Alps. Known for its simple yet rich flavor profile, this dish predominantly features mâche, also known as lamb's lettuce, which offers a nutty flavor and velvety texture. The salad is typically enhanced with regional ingredients like cheese, potatoes, bacon, and dressed with a tangy vinaigrette. The use of local produce reflects the traditional farming practices of Savoy, where ingredients were sourced from family gardens and local markets.
Ingredients
- Mâche - 100g
- New Potatoes - 200g
- Bacon - 100g
- Reblochon Cheese - 100g
- Garlic - 1 clove
- Dijon Mustard - 1 tbsp
- Red Wine Vinegar - 1 tbsp
- Olive Oil - 3 tbsp
- Salt - to taste
- Black Pepper - to taste
Preparation
Prepare the mâche by rinsing it thoroughly under cold water to remove any dirt. Pat it dry using a kitchen towel or a salad spinner.
Boil the potatoes in salted water until they are fork-tender. This should take about 15-20 minutes. Once cooked, drain and allow them to cool slightly before slicing them into bite-sized pieces.
In a skillet, cook the bacon over medium heat until crispy. Remove from the skillet and let it drain on paper towels. Once cooled, crumble the bacon into small pieces.
Slice the Reblochon cheese into thin slices. Ensure it is at room temperature when you are assembling the salad to allow it to melt slightly and integrate seamlessly with other ingredients.
Cooking Process
In a small bowl, combine the mustard, red wine vinegar, a pinch of salt, and a couple of grinds of black pepper. Slowly whisk in the olive oil to emulsify the dressing.
Rub the inside of a salad bowl with the cut side of the garlic clove to impart a subtle hint of garlic aroma into the salad.
Place the prepared mâche, sliced potatoes, crumbled bacon, and cheese into the bowl.
Drizzle the vinaigrette over the salad and toss gently to ensure everything is well-coated.
Serve the salad immediately as a starter or side dish, allowing the flavors of Savoy to transport you to the scenic French Alps.
