Maharashtrian Bhakarwadi is a savory and spicy roll that hails from the state of Maharashtra in India. - Besan (Gram Flour) - 1/2 cup

- Oil - 3 tablespoons
- Mustard Seeds - 1 teaspoon
- Cumin Seeds - 1 teaspoon
- Sesame Seeds - 2 tablespoons
- Poppy Seeds - 1 tablespoon
- Coriander Powder - 2 teaspoons
- Fennel Seeds - 1 teaspoon
- Grated Coconut - 3 tablespoons
- Sugar - 1 tablespoon
- Tamarind Paste - 1 tablespoon
Preparation
Making the Dough
- In a bowl, mix together flour, besan, turmeric powder, a pinch of salt, and 2 tablespoons of oil.
- Slowly add water to the mixture and knead it into a smooth dough. Cover it with a damp cloth and set aside for 30 minutes.
Preparing the Filling
- Heat 1 tablespoon of oil in a pan. Add mustard seeds, cumin seeds, and asafoetida.
- Once they crackle, add sesame seeds, poppy seeds, coriander powder, and fennel seeds.
- Stir in the grated coconut, red chili powder, sugar, and tamarind paste. Cook until the mixture is dry.
- Allow the filling to cool completely before using it.

- Divide the dough into equal portions and roll each portion into a thin roti.
- Spread the prepared filling evenly on the roti.
- Roll the roti tightly into a log and seal the edges with water.
