Majboos Alghazir is a traditional Middle Eastern dish with origins in the Arabian Peninsula, specifically the GCC countries. This aromatic and flavorful dish shares similarities with other famous rice dishes like kabsa, biryani, and pilaf, yet it remains distinct due to its unique spice blend and cooking technique. Ingredients
- Chicken - 1 whole, cut into pieces
- Basmati rice - 2 cups

- Cloves - 5
- Bay leaf - 1
- Cumin - 1 teaspoon
- Coriander powder - 1 teaspoon
- Tomatoes - 2, chopped
- Green chilies - 2, slit
- Salt - to taste
- Black pepper - to taste
- Saffron strands - a pinch, soaked in warm water
- Raisins - 1/4 cup
- Almonds - 1/4 cup, toasted
- Ghee - 2 tablespoons
- Chicken broth - 4 cups
Preparation
Before you begin cooking, make sure to gather and prepare all your ingredients, ensuring that the chicken is clean and cut into pieces, the onion is chopped, and the garlic and ginger are minced and grated, respectively. Soak the saffron strands in a small amount of warm water to release their unique aroma and color.
Cooking Process
Step 1: Sautéing the Aromatics
In a large pot, heat the ghee over medium heat. Add the cinnamon stick, cardamom pods, cloves, and bay leaf. Fry the spices for about a minute until they release their aroma.
Step 2: Cooking the Chicken
Add the chopped onion to the pot and sauté until golden brown. Add the garlic and ginger, and stir for an additional minute. Incorporate the chicken pieces, searing them on all sides until lightly browned. Season with cumin, coriander powder, salt, and black pepper to taste.
Step 3: Creating the Sauce
Stir in the chopped tomatoes and green chilies. Cover the pot and let it simmer for about 10 minutes until the tomatoes are softened and the chicken is partially cooked.
Step 4: Cooking the Rice
Rinse the basmati rice until the water runs clear to remove excess starch. Add it to the pot along with the chicken broth and the saffron water. Stir well and bring the mixture to a boil.

Reduce the heat to low, cover, and let it simmer for approximately 25-30 minutes until the rice is cooked and the liquid is absorbed. Refer to a cooking timer to keep track of the time.
