Introduction

This part of the year, when the winter starts to thaw, is when sap is drawn from maple trees and turned into syrup. Maple taffy, or tire sur la neige, is traditionally made by pouring hot maple syrup onto fresh snow, which quickly cools it into a soft, chewy candy. Ingredients
- Maple Syrup - 2 cups
- Walnuts - 1 cup (chopped)
- Butter - 2 tablespoons

- Clean Snow or crushed ice - a large tray
Preparation
- Place a large tray of clean snow or crushed ice in the freezer to ensure it is adequately chilled by the time you're ready to pour the maple syrup.
- Melt the butter in a medium saucepan over medium heat. Stir in the walnuts and toast for about 3-5 minutes until they are fragrant and lightly golden.
- Remove the toasted walnuts from the heat and set aside. Ensure they remain warm so they can seamlessly integrate into the syrup later.
Cooking Process
Boiling the Maple Syrup
- Pour the 2 cups of maple syrup into a clean saucepan.
- Place the saucepan over medium-high heat, attaching a candy thermometer to the side. You are aiming for the syrup to reach the "soft-ball" stage, which is around 235°F (113°C).
- Monitor the syrup closely, stirring occasionally to prevent scorching. This should take approximately 7-10 minutes. (Set your cooking timer to keep track.)
- Once the syrup reaches the desired temperature, remove it from the heat immediately. Stir in the prepared walnuts, vanilla extract, and a pinch of salt for enhanced flavor.
Creating the Taffy
With the syrup ready, take the tray of snow or crushed ice. Slowly drizzle the hot maple syrup mixture over it in thin lines. The cold will instantly harden the syrup, forming taffy. Use a small wooden stick to gather and roll the taffy for serving.
