Maqlooba
Maqlooba, meaning "upside-down" in Arabic, is a traditional Middle Eastern dish that has been enjoyed by families for generations. This comforting and hearty meal originates from the Levant, specifically popular in Palestinian, Jordanian, and Syrian cuisine. Maqlooba is a unique one-pot dish known for its flavorful aroma, stunning presentation, and the satisfying combination of rice, vegetables, and meat.
Ingredients
- Rice - 2 cups
- Chicken or Lamb - 1 kg, cut into pieces
- Eggplant - 2 large, sliced
- Cauliflower - 1 medium, cut into florets
- Potatoes - 2 large, sliced
- Onion - 1 large, sliced
- Tomatoes - 2, sliced
- Garlic - 4 cloves, minced
- Baharat (Middle Eastern spice blend) - 1 tbsp
- Olive oil - for frying
- Salt - to taste
- Black pepper - to taste
- Bay leaves - 2
- Chicken or lamb stock - 4 cups
- Almonds - for garnish
- Parsley - for garnish
Preparation
Step 1: Preparing the Vegetables
Slice the eggplant, cauliflower, and potatoes. Heat olive oil in a frying pan and fry each vegetable separately until they are golden brown. Drain them on paper towels to remove excess oil.
Step 2: Cooking the Meat
In a large pot, heat some olive oil and sauté the onion and garlic until soft. Add the pieces of chicken or lamb, season with baharat, salt, and black pepper. Cook until the meat is browned on all sides.
Step 3: Layering the Maqlooba
Arrange the fried eggplant, cauliflower, potatoes, and slices of tomatoes at the bottom of the pot with the meat. Add the soaked rice on top, making sure it is evenly distributed. Tuck in bay leaves for added flavor.
Step 4: Cooking Maqlooba
Carefully pour the heated chicken or lamb stock over the rice until it is completely submerged. Bring to a boil, then reduce the heat to low. Cover the pot and allow it to simmer for about one hour. Use this timer to ensure the perfect cooking duration.
Serving the Maqlooba
Once the cooking time is complete, remove the pot from the heat and let it cool for 10 minutes. Place a large serving platter over the pot and quickly flip it upside down. The dish should come out with the meat and vegetables beautifully arranged on top.

Garnish with toasted almonds and chopped parsley. Serve while it is still hot, accompanied with a side of salad or yogurt for added freshness.
