The Mélange de Terroir is a culinary creation that celebrates the rich diversity of local ingredients from a particular region, often referred to as "terroir." Preparation
Step 1: Preparing the Ingredients
Begin by gathering all your ingredients. Select assorted local vegetables such as carrots, potatoes, and any seasonal greens available. Clean and slice them into uniform pieces. Prepare the free-range poultry by cleaning and cutting it into portions. Set aside about 200g of foraged mushrooms, rinsing them gently to remove any dirt.
Step 2: Marinating the Poultry
In a large bowl, combine your Herbs de Provence with a splash of olive oil and marinate the poultry for at least one hour to allow the flavors to blend.
Cooking Process
Step 1: Sautéing
Heat a generous amount of olive oil in a large pan over medium heat. Add the marinated poultry and cook until it's brown on all sides. Remove and set aside.
Step 2: Cooking the Vegetables

Step 5: Adding Pasta
Meanwhile, cook the handmade pasta in a separate pot of boiling salted water until al dente. Drain and add to the mixture.
Step 6: Finishing Touches
Fold in a generous portion of local cheese to enrich the dish and season to taste with sea salt and fresh pepper.
