Mendoza Pasteles

Mendoza Pasteles are a savory and traditional delicacy from the Mendoza province in Argentina. Known for their unique blend of ingredients and hearty flavors, pasteles are a staple during festivities and special occasions. The dish has its roots in the colonial era, where indigenous cooking techniques fused with European influences to create a diverse culinary heritage.

Ingredients

Preparation

1. Prepare the Dough

Begin by making the dough for the pasteles. In a large mixing bowl, combine 3 cups of corn flour with 1 cup of melted butter. Add a pinch of salt and gradually stir in about 2 cups of warm water until a firm but pliable dough forms. Cover the dough with a damp cloth and set aside for 30 minutes to allow the flavors to meld.

2. Make the Beef Filling

In a large skillet, melt 2 tablespoons of butter over medium heat. Add 1 finely chopped onion and sauté until translucent. Stir in 1 large diced bell pepper and cook for another 5 minutes.

Add 500g of ground beef to the skillet, breaking it up with a spoon. Cook until browned. Season the mixture with 2 teaspoons of paprika, 1 teaspoon of cumin, and salt and black pepper to taste. Remove from heat and let it cool.

3. Prepare Additional Fillings

Peel and dice 2 medium potatoes. Boil them in salted water until tender, then drain and set aside.

Chop 2 hard boiled eggs and 1/4 cup of green olives.

4. Assemble the Pasteles

Preheat your oven to 180°C (356°F) or you can use a frying method for a crispier result.

Divide the dough into equal portions, rolling each into a ball. Flatten each ball into a circle on a floured surface.

Spoon a generous amount of the beef filling into the center of each circle, adding a layer of potatoes, followed by chopped hard boiled eggs and green olives.

Fold the dough over to create a half-moon shape and press the edges to seal. Use a fork to crimp the edges for a decorative touch.

5. Cook the Pasteles

Place the pasteles on a baking sheet lined with parchment paper if baking. If frying, heat a pan with oil suitable for frying.

Bake in the oven for 25-30 minutes or until golden brown. If frying, cook each pastel in hot oil for about 3-4 minutes on each side until crispy and golden.

Enjoying Mendoza Pasteles

Mendoza Pasteles are best enjoyed warm, fresh from the oven or frying pan. Serve them with a crisp salad or alongside a hot cup of tea or coffee. They are perfect for sharing with family and friends during gatherings, embodying the spirit of Argentine hospitality.

For added authenticity, pair them with a traditional chimichurri sauce or a light sprinkle of lime juice just before serving. Enjoy your culinary creation and immerse yourself in the rich flavors and history of the Mendoza region.
