Ingredients
- Biscuits - 200g (digestives or graham crackers, for the base)
- Butter - 100g, melted
- Yogurt - 200g, thick Greek-style
- Condensed Milk - 200g
- Cream Cheese - 300g
- Jaggery - 150g, grated (or brown sugar)
- Gelatin - 10g (or agar-agar for a vegetarian alternative)
- Water - 50ml (for dissolving gelatin)
- Cardamom Powder - 1/2 tsp
- Milk - 100ml
- Few strands of saffron (optional, for garnishing)
Instructions
Step 1: Prepare the Base
1. Crush the biscuits into fine crumbs using a food processor or by placing them in a sealed bag and pounding with a rolling pin.
2. Mix the crumbs with butter until well combined.
3. Press the mixture firmly into the base of a springform pan, then chill in the refrigerator while you prepare the filling.
Step 2: Make the Cheesecake Filling
1. In a small bowl, dissolve the gelatin in warm water and allow it to bloom.
2. Gently heat milk and stir in the jaggery until it dissolves completely. Allow it to cool.
3. Blend the cream cheese, yogurt, and condensed milk in a mixer until smooth.
4. Add the cooled jaggery milk mixture and sprinkle in cardamom powder. Blend until completely combined.
5. Slowly fold the gelatin mixture into the cheese mixture ensuring no lumps form.
Step 3: Assemble the Cheesecake
1. Pour the filling over the biscuit base, smoothing it with a spatula.
2. Cover the pan and refrigerate for at least 4-6 hours or until fully set. Set a cooking timer to remind yourself.
Step 4: Serve
1. Carefully remove the cheesecake from the springform pan.
2. Garnish with saffron strands if using, before slicing and serving.
