Miso Feijoada Fusion
About Miso Feijoada Fusion
The Miso Feijoada Fusion is a unique blend of the traditional Brazilian dish, feijoada, and the rich flavors of Japanese miso. Feijoada has its roots in Portuguese cuisine and is typically made with black beans and pork or beef. This beloved Brazilian dish is often considered the national dish and carries a deep cultural significance, often enjoyed during celebrations and family gatherings. By adding miso, a staple of Japanese cuisine made from fermented soybeans, we blend the savory umami flavors of Japan with the comforting heartiness of Brazil.
Ingredients
- Black beans - 2 cups, dried
- Pork belly - 1 pound, cut into cubes
- Chorizo - 2 links, sliced
- Beef - 1 pound, brisket or chuck, cut into cubes
- Miso paste - 3 tablespoons
- Onion - 1 large, chopped
- Garlic - 5 cloves, minced
- Bay leaves - 2
- Orange rind - 1 piece
- Salt and pepper - to taste
- Water - as required for cooking beans
- Rice - for serving
- Spring onions - chopped for garnish
- Parsley - chopped for garnish
Preparation Steps
Step 1: Preparing the Beans
Begin by soaking the black beans overnight in cold water. This helps to soften them and reduce cooking time. Make sure the beans are covered by at least an inch of water, as they will absorb a lot of liquid.
Step 2: Preparing the Meat
Wash and pat dry the pork belly and beef. Cut both into 1-inch cubes. Slice the chorizo links into half-inch rounds. Set the meat aside in separate bowls.
Cooking Process
Step 3: Cooking the Beans and Meat
- Drain the soaked black beans and place them in a large pot with fresh water.
- Add the chopped onion, minced garlic, and bay leaves to the pot.
- Bake at a low heat for 30 minutes. Use a cooking timer to help track this.
- In a separate pan, heat some oil over medium-high heat. Sear the pork belly, beef cubes, and chorizo until browned on all sides. This helps to lock in flavors.
- Add all the seared meats to the pot of black beans.
- Simmer the mixture gently, adding more water as needed to cover the contents adequately. Season with salt and pepper.
- Add the piece of orange rind for an aromatic zest that compliments the umami of [miso](./miso).
- Simmer for another hour or until the beans and meat are completely tender.
- In the last 20 minutes, mix in the miso paste. Be cautious with the heat after this, as boiling can diminish the flavor of miso.
How to Serve and Enjoy
Serve the Miso Feijoada Fusion hot over a bed of fluffy rice. Garnish with chopped spring onions and parsley to add a hint of freshness. This dish pairs well with a light salad or sautéed vegetables. For an authentic Brazilian experience, serve with sliced oranges on the side. Enjoy the harmonious blend of cultures with every savory bite!
