Ingredients
- Dosa Batter - 2 cups

- Tamarind paste - 1 tbsp
- Ginger - 1 inch, grated
- Salt - to taste
- Coriander Leaves - for garnish
- Oil - 3 tbsp
Preparation
Step 1: Preparing the Potato Filling
- Heat a tablespoon of oil in a pan on medium heat.
- Add mustard seeds and let them splutter.
- Add curry leaves and onion; sauté until the onions turn golden brown.
- Add turmeric, salt, and mashed potato; mix well.
- Cook for 2-3 minutes and turn off the heat. Garnish with coriander leaves. Set aside.
Step 2: Preparing the Chutney
- In a blender, add red chillies, tamarind paste, a pinch of salt, and some water. Blend into a smooth paste.
- Taste and adjust salt if needed.
- Transfer to a bowl and set aside.
Cooking Process
- Heat a griddle or non-stick tawa, grease lightly with oil.
- Pour a ladleful of dosa batter in the center and spread in a circular motion to make a thin dosa.
- Allow it to cook on medium heat until the edges start to leave the pan.
- Spread a thin layer of prepared chutney over the dosa.
- Place a portion of the potato filling on one side of the dosa and fold the other side over to encase the filling.
- Cook until the underside turns golden and crispy.
- Repeat with the remaining batter and filling.
