Ngontchou
Introduction
Ngontchou is a traditional dish from the Bamileke tribe in Cameroon. Typically enjoyed during ceremonial events, it’s a dish that represents both cultural heritage and community spirit. Prepared with a variety of fresh ingredients, it boasts a delicious combination of flavors that offer a true taste of African culinary art.
Ingredients
Preparation
To start your preparation of Ngontchou, make sure you have all your ingredients ready. Begin by peeling the yam, washing them thoroughly, and cutting them into cubes. Soak the groundnuts in warm water for about 30 minutes to remove the skins easily. While the groundnuts are soaking, chop the onion, mince the garlic, and grate the ginger.
Cooking Process
Step 1: Preparing the Groundnut Base
Once the groundnuts are ready, blend them until smooth. In a large pot, heat some palm oil and sauté the onion, garlic, and ginger until they are fragrant and golden brown. Then, add the blended groundnuts paste, stirring continuously to prevent sticking. Add a little vegetable broth to achieve a smooth consistency.
Step 2: Cooking the Yam
Add the cubed yam to the pot along with more vegetable broth and let it simmer until the yam is tender—approximately 20 minutes on medium heat. Make sure to check your timer so you don’t overcook it.
Step 3: Adding Spinach and Final Seasoning
As the yams are nearly cooked, add the spinach, allowing it to wilt into the dish. Season with salt, pepper, and chili pepper according to your preference. Stir everything together until the flavors harmonize.
Enjoying Ngontchou
Serve Ngontchou hot, preferably in a large communal bowl to enhance the traditional experience.
