Omani Clouds, known locally as Raed, is a traditional sweet often enjoyed during festive occasions and gatherings in Oman. Its origins trace back to the rich culinary history of the Arabian Peninsula, where influences from Persia and India blend seamlessly with indigenous flavors to create a distinct Omani culinary identity. This dessert is known for its light, fluffy texture and the sweet aroma of saffron and rosewater.
Ingredients
- Semolina - 2 cups
- Sugar - 1 cup
- Water - 1 1/2 cups
- Saffron - a pinch
- Rose Water - 2 tablespoons
- Cardamom powder - 1 teaspoon
- Almonds (blanched and slivered) - 1/2 cup
- Butter - 1/4 cup
- Cream - 1/2 cup
Preparation
Step 1: Prepare the Saffron
In a small bowl, soak the saffron strands in a tablespoon of water. Set aside to let the color and aroma infuse.
Step 2: Toast the Semolina
In a heavy-bottomed pan, melt the butter over medium heat. Add the semolina and stir continuously until it turns a golden brown and releases a nutty aroma. This should take about 10 minutes, so set your cooking timer to ensure perfect toasting.
Step 3: Make the Syrup
In a separate saucepan, bring the sugar and remaining water to a boil. Reduce the heat and let it simmer until it forms a light syrup. Stir in the rose water and cardamom powder. Finally, add the soaked saffron and its soaking water.
Cooking Process
Step 4: Combine Ingredients
Carefully pour the syrup into the toasted semolina mixture, stirring constantly to prevent lumps. Allow the mixture to absorb the liquid fully, resulting in a thick, fluffy consistency.
Step 5: Incorporate the Cream
Gently fold in the cream, which will give the dessert its signature cloud-like texture. Continue to stir until the mixture is smooth and homogenous.
Step 6: Add the Almonds
Incorporate the slivered almonds into the mixture, reserving a small portion for garnishing the top of the dessert.
Serving Suggestions
Transfer the Omani Clouds to a serving platter and sprinkle the reserved almonds over the top. Allow to cool slightly before serving. This dessert pairs beautifully with Omani coffee and can be enjoyed during special celebrations or shared with guests as an indulgent treat.
