Pastel de Carne Paranense
Introduction to Pastel de Carne Paranense
Pastel de Carne Paranense, a cherished savory delight originating from the tropical region of Paraná in Brazil, combines the rich flavors of seasoned beef wrapped in a crispy, golden pastry. Its roots date back to the blending of indigenous ingredients and Portuguese culinary techniques, resulting in a snack that's celebrated at fairs and adored at family gatherings.
Often referred to as Brazilian empanadas, these pastéis vary in fillings and are enjoyed across the country, but the Paranense variation is distinguished by its unique seasoning and cooking style, making it a staple of the local gastronomy.
Ingredients Required
- 500g of ground beef
- 1 large onion, finely chopped
- 3 cloves of garlic, minced
- 2 tablespoons of olive oil
- 1 teaspoon of ground cumin
- 1 teaspoon of ground coriander
- 1 teaspoon of dried oregano
- 2 tablespoons of tomato paste
- 500g of all-purpose flour
- 100g of unsalted butter, chilled and diced
- 2 eggs (one for dough, one for brushing)
- 2/3 cup cold water
- Salt and pepper to taste
- Vegetable oil for frying
Step-by-Step Preparation
1. Preparing the Filling
Heat olive oil in a skillet over medium heat. Add onion and sauté until translucent. Add garlic and cook until fragrant.
Stir in the ground beef and cook until browned. Season with cumin, coriander, and oregano. Add tomato paste, then mix well. Cook for another 5 minutes, adjust salt and pepper as needed, and let the mixture cool.
2. Preparing the Dough
In a large bowl, combine flour and a pinch of salt. Cut butter into the flour until the mixture resembles coarse crumbs. Make a well in the center and pour in one beaten egg and cold water.
Mix until a dough forms, then knead on a floured surface until smooth. Wrap in plastic and let rest in the fridge for 30 minutes.
3. Assembling the Pastéis
Roll out the dough to 2mm thickness. Cut into circles using a 10cm round cutter. Place a tablespoon of beef filling in the center of each circle.
Brush the edges with water, fold the dough over filling to make a half-moon shape, and press edges to seal.
4. Cooking the Pastéis
Heat vegetable oil in a deep pan until it reaches 180°C. Fry the pastéis in batches until golden and crispy, about 3-4 minutes each. Drain on paper towels.
For precise timing, set a cooking timer to ensure even frying.
