Preparation
Step 1: Cleaning and Boiling the Chicken
Begin by cleaning the chicken, removing any excess fat while keeping the skin for flavor. Place the chicken in a large pot and cover with water. Bring it to a boil to remove impurities. Once it starts boiling, drain and rinse the chicken under cold water to clear away any foam.
Step 2: Preparing the Aromatics
While the chicken is boiling, char the onion and ginger on an open flame or in a broiler until they're slightly blackened. This process intensifies the flavor of the broth. Once charred, peel and rinse them to remove most of the blackened parts.
Step 3: Creating the Broth
Refill your pot with clean water and add the chicken back, with the charred onion and ginger, a few star anise, a stick of cinnamon, a black cardamom pod, and a couple of cloves. Add a tablespoon of salt and a piece of rock sugar for a balanced flavor. Let the broth simmer on low heat; ensure it simmers for a couple of hours to extract the rich flavors from the chicken. For exact timings, feel free to use a cooking timer.
Step 4: Preparing the Rice Noodles
Soak the rice noodles in warm water for about 30 minutes or until they become soft. Drain the noodles and set them aside. When it’s nearly time to serve, bring a pot of water to a boil and quickly submerge the noodles for 15-30 seconds. Rinse them with cold water to prevent them from cooking further and sticking together.
Cooking Process
Step 1: Strain the Broth
After simmering, remove the chicken and separate the meat from the bones. Strain the broth through a fine sieve to ensure clarity. Taste and adjust the seasoning with more salt or a splash of fish sauce to enhance the umami flavors.
Step 2: Serving the Phở Gà
In each serving bowl, add a portion of the blanched rice noodles and top with shredded chicken meat. Pour the hot broth over the noodles to cover, allowing the heat to warm the contents of the bowl.
Step 3: Garnishing
Garnish each bowl with green onions, cilantro, a squeeze of lime, and accompanying bean sprouts. Place Thai basil leaves, slices of jalapeño, hoisin sauce, and sriracha on the side, allowing personal customization.
