Ingredients
For the Griot
- Pork Shoulder - 2 pounds, cut into cubes
- Lime Juice - 1/2 cup
- Orange Juice - 1/4 cup
- Thyme - 1 tablespoon
- Garlic Cloves - 5 cloves, minced
- Scotch Bonnet Peppers - 2, chopped
- Salt - 1 tablespoon
- Black Pepper - 1 teaspoon
- Vegetable Oil - for frying
For the Pikliz
- Cabbage - 1 head, shredded
- Carrots - 2, julienned
- Scotch Bonnet Peppers - 3, sliced
- Onion - 1, thinly sliced
- White Vinegar - 2 cups
- Salt - 1 tablespoon
- Sugar - 1 teaspoon
Preparation
Preparing the Griot
- In a large bowl, mix lime juice, orange juice, thyme, garlic, scotch bonnet peppers, salt, and black pepper.
- Add the pork cubes and ensure they are well-coated with the marinade. Cover and refrigerate for at least 4 hours or overnight for deeper flavors.
- When ready, remove the pork from the marinade and pat dry with paper towels.
Preparing the Pikliz
- Combine cabbage, carrots, scotch bonnet peppers, and onion in a large glass jar or bowl.
- In a separate bowl, mix vinegar, salt, and sugar. Stir until the salt and sugar are dissolved.
- Pour the vinegar mixture over the vegetables, ensuring they are completely submerged. Close the jar or cover the bowl, then refrigerate. It should sit for at least 24 hours before serving.
Cooking Process
- In a large deep pan, heat vegetable oil over medium-high heat.
- Once hot, fry the marinated pork cubes in batches. Cook until golden brown and ensure they are cooked through.
- Remove the pork from the oil and place it on paper towels to drain excess oil.
- Arrange the fried griot on a serving platter and spoon the pikliz over the top or serve it on the side.
The whole cooking time should be monitored using a cooking timer to ensure accurate timing.
