Qaneefah Melty Bite

Qaneefah, often known in other regions as Kanafeh, is a Middle Eastern dessert that is beloved for its rich flavors and distinctive texture. Originating from the Levant region, this dessert is a staple at any celebratory gathering. Traditionally, Qaneefah is made with thin noodle-like pastry or semolina dough and is drenched in sweet sugar syrup. The heart of the dish is its molten cheese or cream filling, which offers a delectable contrast to the crisp exterior. Over centuries, Qaneefah has been adapted with regional variations and adjustments, but the essence remains a beloved combination of crunchy and soft, sweet and savory.

Ingredients

Preparation

For the Sugar Syrup

  1. Combine sugar and water in a saucepan over medium heat.
  2. Stir until the sugar completely dissolves.
  3. Add the lemon juice and bring the mixture to a boil.
  4. Let it simmer for about 10 minutes, then remove from heat.
  5. Add the rose water and let the syrup cool.

For the Qaneefah

  1. Preheat the oven to 350°F (175°C).
  2. Shred the Kataifi dough into fine pieces.
  3. Mix the shredded Kataifi with the melted butter until well coated.
  4. Firmly pack half of the buttered Kataifi dough into a greased baking dish.
  5. Spread the cheese evenly across the dough. If using mozzarella, drain any excess water beforehand.
  6. Cover the cheese layer with whipped cream to keep it moist during baking.
  7. Spread the remaining Kataifi on top of the cheese and whipped cream layers.
  8. Press gently to compact the layers.
  9. Bake in the preheated oven for 30-40 minutes or until the top is golden brown.

Serving the Qaneefah

  1. Immediately after taking the Qaneefah out of the oven, pour half of the prepared sugar syrup over it.
  2. Allow the Qaneefah to rest for 10 minutes so it absorbs the syrup.
  3. Before serving, drizzle more sugar syrup to taste.
  4. Cut into squares or diamond shapes to serve.
