Qaneefah Melty Bite
Qaneefah, often known in other regions as Kanafeh, is a Middle Eastern dessert that is beloved for its rich flavors and distinctive texture. Traditionally, Qaneefah is made with thin noodle-like pastry or semolina dough and is drenched in sweet sugar syrup. Ingredients
- 500g Kataifi dough
- 250g butter (melted)
- 300g cheese (Nabulsi or mozzarella)
- 200ml whipped cream
- 1 cup sugar
- 1 cup water
- 1 tablespoon lemon juice
- 1 tablespoon rose water
Preparation
For the Sugar Syrup
- Combine sugar and water in a saucepan over medium heat.
- Stir until the sugar completely dissolves.
- Add the lemon juice and bring the mixture to a boil.
- Let it simmer for about 10 minutes, then remove from heat.
- Add the rose water and let the syrup cool.
For the Qaneefah
- Preheat the oven to 350°F (175°C).
- Shred the Kataifi dough into fine pieces.
- Mix the shredded Kataifi with the melted butter until well coated.
- Firmly pack half of the buttered Kataifi dough into a greased baking dish.
- Spread the cheese evenly across the dough. If using mozzarella, drain any excess water beforehand.
- Cover the cheese layer with whipped cream to keep it moist during baking.
- Spread the remaining Kataifi on top of the cheese and whipped cream layers.
- Press gently to compact the layers.
- Bake in the preheated oven for 30-40 minutes or until the top is golden brown.
Serving the Qaneefah
- Immediately after taking the Qaneefah out of the oven, pour half of the prepared sugar syrup over it.
- Allow the Qaneefah to rest for 10 minutes so it absorbs the syrup.
- Before serving, drizzle more sugar syrup to taste.
- Cut into squares or diamond shapes to serve.
