Qorma Gosht
Introduction
Qorma Gosht is a beloved South Asian dish, cherished for its rich and aromatic flavors. It has roots in Mughlai cuisine and is often enjoyed in Indian and Pakistani households. This dish is traditionally made with succulent pieces of mutton, simmered in a spiced yogurt-based gravy. Qorma, or korma, has a history dating back to the Mughal era, and it is renowned for its opulent and indulgent essence. Ingredients
- Mutton - 1 kg
- Yogurt - 1 cup
- Onions - 3 large, finely sliced
- Ginger paste - 2 tablespoons
- Garlic paste - 2 tablespoons
- Cooking oil - 1/2 cup
- Ghee - 2 tablespoons
- Cinnamon stick - 1
- Green cardamom - 4 pods
- Cloves - 6
- Cumin seeds - 1 tablespoon
- Coriander powder - 2 tablespoons
- Turmeric powder - 1 teaspoon
- Red chili powder - 1 teaspoon
- Garam masala - 1 tablespoon
- Salt - to taste
- Fresh coriander leaves - for garnish
- Water - as required
Preparation
Before starting the cooking process, ensure all ingredients are washed and prepped. The mutton should be cut into medium-sized pieces and patted dry to remove any excess moisture. This will help in browning the meat later.
Marination
To infuse flavors deeply into the mutton, marinate it with yogurt, ginger paste, garlic paste, and a pinch of salt. Mix well and let it sit for at least 2 hours or overnight in the refrigerator for the best results.
Cooking Process
Step 1: Frying the Onions
Heat the cooking oil and ghee in a large pot. Add the sliced onions and fry on medium heat until they become golden brown and crispy. This will take around 10-15 minutes. Remove the onions from the pot and set aside, leaving the oil in the pot.
Step 2: Cooking the Whole Spices
In the same oil, add the cinnamon stick, green cardamom pods, and cloves. Sauté these spices until they release their aroma.
Step 3: Browning the Mutton
Add the marinated mutton to the pot and cook on high heat, stirring frequently until the meat starts to brown. This should take about 8-10 minutes.
Step 4: Cooking the Masala
Lower the heat and add the cumin seeds, coriander powder, turmeric powder, and red chili powder. Cook until the spices are well-incorporated with the mutton, adding a splash of water if necessary to prevent sticking.
Step 5: Simmering
Add enough water to cover the mutton and bring to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer until the meat is tender. This can take about 45 minutes to 1 hour. Remember to occasionally check and stir to ensure nothing is sticking to the bottom of the pot.
Step 6: Final Touch
Finally, add the fried onions, breaking them up as you do so, and mix gently. Stir in the garam masala and adjust salt to taste. Cook for another 5-10 minutes, letting the flavors meld together.
Serving Qorma Gosht
Once the mutton is tender and the oil begins to separate on the surface, your Qorma Gosht is ready to serve. Garnish with freshly chopped coriander leaves.
