Introduction to Roti Canai
Roti Canai is a delicious flatbread that is a popular dish across Southeast Asia, particularly in Malaysia and Singapore. It is known for its crispy outer layer yet soft and fluffy interior. Often served with curry or dhal, Roti Canai is a staple breakfast or snack option that's loved by many. Originating from the Indian subcontinent, it has become a fusion dish with unique twists and methods adapted by different regions.
Ingredients for Roti Canai
- All-purpose flour - 500 grams
- Water - 250 ml, adjust as needed
- Salt - 1 teaspoon
- Sugar - 1 tablespoon
- Ghee or vegetable oil - 100 ml
- Egg - 1 (optional for rich flavor)
- Condensed milk - 2 tablespoons (optional for sweetness)
Preparation
Step 1: Mixing the Dough
Begin by sifting the all-purpose flour into a large mixing bowl. Add salt and sugar. If you're using an egg and condensed milk, beat them together and add to the mixture. Gradually pour in water while mixing, either using a spoon or your hands, until a dough forms.
Step 2: Kneading the Dough
Once the dough holds together, begin kneading on a lightly floured surface. Knead for about 10-15 minutes or until smooth and elastic. The dough should not stick to your fingers. You may reference a timer to ensure you knead sufficiently.
Step 3: Resting the Dough
Divide the dough into small balls, about the size of a golf ball. Coat each ball lightly with ghee or vegetable oil and let them rest on a greased tray. Cover the tray with a damp cloth and let the dough rest for about 2-4 hours. This allows the gluten to relax and will make it easier to stretch the dough thinly later.
Cooking Process
Step 1: Stretching the Dough
After resting, take one dough ball and flatten it slightly with your hands. On a well-oiled surface, use your hands to stretch the dough into a very thin sheet. Experienced makers often toss the dough in the air to stretch it, but beginners can stretch it on the table by pulling it gently.
Step 2: Folding the Dough
Once stretched thin, fold the dough into a rectangular shape. This is done by folding the sides inwards to form a long thin roll, then coiling it into a circular shape resembling a snail shell. Press gently to flatten.
Step 3: Cooking the Roti
Heat a flat griddle or frying pan over medium heat and add a little ghee or vegetable oil. When hot, cook the flattened roti for 2-3 minutes on each side or until golden brown and crispy. Use a timer to avoid under or overcooking.
Serving Suggestions
Serve the warm Roti Canai with your choice of curry or dhal. They are also delicious when enjoyed with sugar or condensed milk as a sweet treat. Pair with tea or coffee for a more fulfilling meal experience.
