Making the Sugar Floss (Sai Mai)
Prepare sugar by heating it slowly until it melts and reaches a caramel-like texture. Ensure to keep stirring to prevent burning.
Add finely chopped pandan leaves while stirring to infuse the mixture with a distinct aroma and delicate green color.
Pour the mixture onto a marble slab or a smooth countertop to cool slightly.
Once it can be handled, start pulling the sugar into long, thin strands, mimicking the texture of hair. This forms the Sai Mai.
Preparing the Roti
Sift flour into a mixing bowl. Add a pinch of salt for flavor balance.
Gradually add the egg and milk mixture to the flour, stirring continuously to maintain a smooth texture.
Add a small amount of oil to ensure the batter is not too sticky.
Heat a non-stick pan over medium heat, lightly coat with oil, then pour a small amount of batter, spreading it thinly to cover the pan surface.
Cook until edges start to lift, then carefully flip to cook the other side for a few more seconds.
Transfer the cooked roti to a plate and repeat with the remaining batter.
