Sichuan Lava Buns

Introduction to Sichuan Lava Buns

Originating from the Sichuan province in China, Sichuan Lava Buns, also known as 'Sichuan Tangbao,' are renowned for their spicy and flavorful broth that erupts with every bite. This dish combines the soft, pillowy texture of steamed buns with a fiery liquid center, delivering an unforgettable culinary experience. Sichuan cuisine, known for its bold flavors and use of garlic and chili peppers, encompasses this dish perfectly by incorporating the iconic Sichuan peppercorns that provide a hot, numbing sensation.

Ingredients

Preparation

  1. Dough Preparation

In a large bowl, combine flour, yeast, sugar, and salt. Gradually add water while mixing until a dough forms. Knead the dough on a floured surface until it becomes smooth and elastic. Let it rest in a covered bowl for 1 hour or until it doubles in size.

  2. Gelatinous Broth

To create the broth center, dissolve gelatine in 100ml of warm water. Mix with soy sauce, Sichuan peppercorns, and chili oil. Pour the mixture into a flat container and refrigerate until set.

  3. Filling Preparation

In a mixing bowl, combine minced pork, minced ginger, and chopped spring onions. Cut the gelatinous broth into small cubes and mix gently with the pork filling.

Cooking Process

  1. Divide the dough into equal portions and roll them into balls. Flatten each ball, place a spoonful of the pork filling with broth cubes in the center, and carefully seal it by pleating the edges towards the center.

  2. Prepare a steamer and line it with parchment paper or cabbage leaves to prevent sticking.

  3. Place the buns in the steamer, ensuring they are spaced apart to give room for expansion.

  4. Steam the buns over boiling water for about 12-15 minutes. (Cooking time may vary depending on the size of the buns).

How to Enjoy

Once cooked, serve the Sichuan Lava Buns immediately with a side of vinegar for dipping. Enjoy them while they're hot for the full experience as the bun encases a delightful, hot, and savory broth.

For a delightful twist, try pairing the buns with a chilled cucumber salad or steamed greens to balance the spice and heat.
