Tacos al Pastor
Tacos al Pastor is a traditional Mexican dish that combines influences from the Middle East with classic Mexican flavors. Originating in the 1920s and 30s when Lebanese immigrants arrived in Mexico, this dish draws inspiration from shawarma, with marinated pork sliced thin and cooked on a vertical spit. Over time, Mexican cooks adapted the flavors using local spices and ingredients, resulting in the iconic Tacos al Pastor we know today.

Preparation
- Start by preparing the marinade. In a blender, combine guajillo chiles, ancho chiles, garlic, vinegar, achiote paste, oregano, cumin, lime juice, and salt. Blend until smooth.
- Place the sliced pork in a large bowl and pour the marinade over the meat, ensuring it is well-coated. Cover and refrigerate the marinated pork for at least 4 hours, or overnight for best results.
Cooking Process
Setting Up the Grill
Traditionally, Tacos al Pastor are cooked with the meat stacked on a trompo or spit. For home cooking, you can use a grill or oven. Preheat your grill or oven to a medium-high temperature. If using an oven, set it to broil.
Cooking the Pork
Thread the marinated pork slices onto skewers, alternating with pieces of pineapple. Cook on the grill or in the oven for around 30 to 45 minutes, rotating to ensure even cooking. The meat should be slightly charred and crispy on the outside. Check the meat with a cooking timer to ensure it reaches an internal temperature of 145°F (63°C).
Warming the Tortillas
While the meat cooks, warm the corn tortillas on the grill or in a dry skillet over medium heat for about 1 minute on each side until pliable and warm.
How to Enjoy Tacos al Pastor
Once the pork and pineapple are cooked, remove from skewers and chop into small, bite-sized pieces.
- Place a small amount of the cooked pork and pineapple onto a warmed corn tortilla.
- Top with chopped onion and cilantro.
- Serve with a side of salsa and lime wedges for an extra kick.
