Tacos Al Pastor Flambeado
Background and History
Tacos Al Pastor is a traditional Mexican dish with a rich history, dating back to the influence of Lebanese immigrants on Mexican cuisine. The method of cooking meat on a vertical spit, known as "shawarma" in the Middle East, was adapted in Puebla, Mexico, and evolved into what is now known as Tacos Al Pastor. "Al Pastor" means "shepherd's style," reflecting the meat's pastoral preparation. Adding the flambeado technique elevates this classic dish by adding an exciting element of flames and a slight caramelization to the pork, enhancing its flavors.
Ingredients
- Pork (2 pounds, pork shoulder or loin)
- Achiote paste (2 tablespoons)
- Fresh pineapple (1 cup, diced)
- Onion (1, finely chopped)
- Garlic cloves (4, minced)
- Lime (2, juiced)
- Apple cider vinegar (1/4 cup)
- Chili powder (1 tablespoon)
- Dried oregano (1 teaspoon)
- Ground cumin (1 teaspoon)
- Salt (to taste)
- Black pepper (to taste)
- Vegetable oil (2 tablespoons)
- Corn tortillas (12)
- Tequila (1/2 cup, for flambé)
- Fresh cilantro (for garnish)
- Radishes (sliced, for garnish)
- Salsa (for serving)
Preparation
To ensure succulent and flavorful Tacos Al Pastor Flambeado, begin by slicing the pork into thin strips. This allows the marinade and cooking process to infuse flavors deeply and ensures a tender texture. In a large bowl, prepare the marinade by combining achiote paste, lime juice, vinegar, garlic, chili powder, oregano, cumin, salt, and pepper.
Add the sliced pork to the bowl, ensuring each piece is thoroughly coated with the marinade. Cover the bowl and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to develop.
Cooking Process
Step 1: Preparing the Grill
Preheat your grill to medium-high heat. While the grill is preheating, thread the marinated pork onto metal skewers, interspersed with pieces of pineapple and onion to enhance the flavor during cooking.
Step 2: Grilling the Meat
Place the skewers on the preheated grill. Cook for approximately 10-12 minutes, turning occasionally, until the pork is cooked through and slightly charred. Ensure the internal temperature reaches at least 145°F according to this cooking timer.
Step 3: Flambé
In a pan, add oil over medium heat. Carefully remove the pork from skewers and add to the pan. Pour tequila over the pork and pineapple mixture and, using a long lighter, ignite the alcohol. Allow the flames to subside naturally as the alcohol burns off, infusing the dish with a rich aroma and slight caramelization.
Serving the Dish
Assembling the Tacos
Wrap the corn tortillas in foil and warm them on the grill for about 2 minutes. To assemble, place a portion of the pork and caramelized pineapple mixture onto each tortilla. Garnish with fresh cilantro and sliced radishes as desired.
