Ingredients
- Masa - 4 cups
- Pork shoulder - 2 pounds, cut into chunks

- Baking powder - 2 teaspoons
- Cumin - 1 teaspoon
- Garlic cloves - 2, minced
- Onion - 1 large, diced
Preparation
Preparing the Filling
Begin by boiling the pork shoulder in a large pot with water, seasoned with salt and garlic, until tender. Once cooked, shred the pork using two forks and set aside.
In a pan, sauté the onion until translucent. Add the shredded pork and stir in the chili sauce. Let the mixture simmer for 10-15 minutes, allowing the flavors to meld.
Preparing the Masa
In a mixing bowl, combine the masa, baking powder, and salt. In a separate bowl, beat the lard until fluffy. Gradually add the beaten lard to the masa mixture, alternating with chicken broth, and knead until a smooth dough forms.
Soaking the Corn Husks
Soak the corn husks in warm water for about an hour until they become pliable. Drain well before using.
Assembling the Tamales
Spread about 2 tablespoons of the masa mixture onto the center of each corn husk. Add a heaping tablespoon of the pork filling into the center of the masa. Fold the sides of the husk and then the bottom to enclose the filling.
Cooking Process
Place the tamales upright in a steamer and cook for approximately 90 minutes, or until the masa pulls away easily from the husks. Check the water level frequently and add more hot water to ensure continuous steaming.
