Ingredients
- Dulce de leche - 500g
- All-purpose flour - 300g
- Butter - 200g, chilled and diced
- Icing sugar - 100g
- Egg - 1 large

Preparation
- Begin by preparing the crust. In a large bowl, mix the all-purpose flour and icing sugar. Add the chilled butter and rub it into the flour mixture using your fingertips until a breadcrumb-like consistency forms.
- Add the egg and vanilla extract. Mix until a dough begins to form.
- Knead the dough lightly, wrap in plastic wrap, and chill in the refrigerator for 30 minutes.
Cooking Process
Preheat your oven to 180°C (350°F). Grease a 24 cm tart pan. On a lightly floured surface, roll out the chilled dough to fit the tart pan. Gently press the dough into the pan, trimming the edges. Prick the base with a fork and chill for another 15 minutes.
- Line the pastry with baking parchment and fill with baking beans or rice. Bake for 15 minutes then remove the parchment and beans. Bake for another 10 minutes until the pastry is golden. Allow to cool.
- Once cool, fill the pastry shell with dulce de leche. Smooth the top with a spatula.
- Let the tart set at room temperature or in the fridge for about an hour before serving.
