Preparation

Step 1: Prepare the Pastry

Start by making the pâte sucrée, or sweet shortcrust pastry. Combine the flour, sugar, and salt in a large mixing bowl. Add the cold, cubed butter and rub it into the dry ingredients until the mixture resembles breadcrumbs. Add the egg and mix until the dough comes together. Wrap the dough in cling film and refrigerate for at least 30 minutes to rest.

Step 2: Roll and Prebake the Pastry

After chilling, roll out the dough on a lightly floured surface to fit a 23cm tart tin. Carefully line the tin with the pastry, trimming excess edges. Prick the base with a fork, line with baking paper, and fill with baking beans. Preheat the oven to 180°C (350°F) and bake for 15 minutes. Remove the beans and bake for another 5 minutes until golden. Allow to cool.

Step 3: Make the Walnut Filling

While the pastry cools, prepare the walnut filling. In a mixing bowl, combine the ground walnuts, cream, and sugar. Beat the eggs and add to the mixture along with the vanilla extract and honey. Mix well until smooth.
