Tarte Occitane
Background and History
The Tarte Occitane is a classic dish originating from the Occitanie region in southern France. Ingredients
- Flour - 200g
- Butter - 100g, chilled and diced
- Salt - a pinch
- Water - 3-4 tbsp, cold
- Olive Oil - 2 tbsp
- Onions - 2 large, thinly sliced
- Garlic - 3 cloves, minced
- Tomatoes - 3, thinly sliced
- Fresh Basil - a handful, chopped
- Fresh Thyme - 1 tsp, chopped
- Goat Cheese - 150g
- Eggs - 3, beaten
- Cream - 200ml
- Black Pepper - to taste
Preparation of the Pastry
To prepare the pastry, start by mixing the flour and salt in a large bowl. Add the chilled and diced butter to the bowl, and, using your fingertips, rub it into the flour until the mixture resembles fine breadcrumbs.
Gradually add the water, one tablespoon at a time, until the dough comes together. Be cautious not to overwork the dough. Wrap the dough in cling film and refrigerate it for at least 30 minutes.
Preparation of the Filling
Meanwhile, heat the olive oil in a large pan over medium heat. Add the thinly sliced onions and minced garlic. Cook them slowly for about 15 minutes until the onions are soft and caramelized.
Assembly of the Tarte
Preheat the oven to 180°C (350°F). Roll out the chilled dough on a floured surface and line a 24cm tart tin with it. Trim the excess dough from the edges.
Arrange half of the caramelized onions over the base of the tart, followed by a layer of thinly sliced tomatoes. Scatter a handful of chopped fresh basil and thyme leaves, and layer half of the crumbled goat cheese.
In a separate bowl, beat together the eggs and cream. Season with salt and black pepper to taste. Pour half of the mixture into the tart case. Repeat the layering process with the remaining onions, tomatoes, basil, thyme, and goat cheese. Finish by pouring the remaining egg and cream mixture on top.
Cooking Process
Place the tart in the preheated oven and bake for 40-45 minutes or until the filling is set and the top is golden brown. For perfect timing, consider using a cooking timer to keep track of the baking time.
