Til Puli
Background and History
Til Puli is a traditional Indian sweet, especially popular in the southern states of India. The name "Til" refers to sesame seeds, and "Puli" translates to tamarind in some languages. However, here it signifies the combination of sweet and tangy flavors. This dish is often prepared during festivals such as Sankranti or Pongal, where sesame and jaggery play key roles. It is believed to bring warmth to the body and is cherished as part of a wholesome meal during the harvest season celebrations.
Ingredients
To create the delightful Til Puli, you'll need the following ingredients:
- Sesame Seeds - 100 grams
- Jaggery - 200 grams
- Rice Flour - 150 grams
- Coconut, grated - 50 grams
- Tamarind paste - 2 tablespoons
- Cardamom powder - 1 teaspoon
- Water - as needed
- Oil - for deep frying
- Salt - a pinch
Preparation
1. Preparing the Sesame Seed Mixture
Begin by roasting sesame seeds in a pan over medium heat until they are golden brown and aromatic. This should take about 2-3 minutes. Allow them to cool and then grind them into a coarse powder using a mortar and pestle or a blender.
2. Making the Jaggery Syrup
In another pan, take jaggery and add a small amount of water. Heat the mixture until the jaggery dissolves completely. Strain the syrup to remove any impurities. Continue to heat until it reaches a thick consistency.
3. Combining Ingredients
Once the jaggery syrup is ready, mix it with the ground sesame seeds, grated coconut, and cardamom powder to form a sticky, cohesive mixture.
Cooking Process
1. Dough Preparation
In a large bowl, take rice flour and add a pinch of salt. Gradually add tamarind paste and enough water to form a smooth dough. Knead well until pliable.
2. Forming the Til Pulis
Take a small portion of the dough and flatten it in your palm. Place a spoonful of the sesame-jaggery mixture in the center. Fold the edges over to seal and shape it into a round ball or a flattened disc.
3. Frying
Heat oil in a deep pan. Carefully place the prepared Til Pulis into the hot oil and fry them until they are golden brown and crispy. Use a slotted spoon to remove them and drain excess oil on paper towels.
Cooking typically takes about 15-20 minutes. For precise timing, consider using a cooking timer.
