Start by cleaning the mussels under cold running water, scrubbing the shells and removing the beards. Discard any that do not close when tapped.
Peel and dice the potatoes, and finely slice the leek. Set aside.

In a large pan, melt the butter over medium heat. Add the leeks and cook until soft. Add the mussels, cover, and cook for 5 minutes or until the shells have opened. Remove the mussels from their shells and set aside. Discard any that remain closed.
