Sfeeha, in general, refers to a stuffed pastry, while Zaatar gives it a distinctive herby flavor loved by many. Ingredients
- Flour - 2 cups

Preparation
The first step in making the Zaatar Sfeeha is preparing the dough. In a large mixing bowl, combine the yeast with sugar and warm water. Let this mixture sit for about 5 minutes until it becomes frothy, indicating that the yeast is activated. This is crucial for the dough to rise properly.
In a separate bowl, mix the flour with salt. Once the yeast is ready, combine it with the flour mixture along with 2 tablespoons of olive oil. Stir until a dough forms. Cooking Process

Once the dough has risen, preheat your oven to 400°F (200°C). Punch down the dough to release air bubbles and divide it into equal-sized balls, roughly the size of a lemon. Roll each ball into a flat circle on a floured surface, about 1/4 inch thick.
Spread a generous amount of the zaatar mixture on each dough circle, ensuring the edges are slightly thicker to prevent the topping from spilling over during baking. Place the sfeehas on a baking sheet lined with parchment paper. Optionally, sprinkle some sesame seeds on top for added texture.
