About Aibika Tumunu
Aibika Tumunu is a traditional dish rooted in the culinary traditions of Papua New Guinea. Known for its unique blend of local ingredients, it represents the region's rich cultural tapestry and biodiversity. Aibika, also known as aibika leaves or slippery cabbage, is the star ingredient, paired with coconut and other local produce to create a dish that is both nutritious and flavorful.
Ingredients
- Aibika leaves - 1 bunch
- Coconut milk - 250ml
- Chicken breast - 500g
- Onion - 1 large, chopped
- Garlic - 3 cloves, minced
- Ginger - 1-inch piece, grated
- Tomato - 2, diced
- Chili pepper - 1, diced (optional)
- Taro root - 300g, peeled and cubed
- Salt - to taste
- Black pepper - to taste
- Lime juice - 1 lime
- Coriander leaves - for garnish
Preparation
Step 1: Prepare the Ingredients
Start by washing the aibika leaves thoroughly and tearing them into smaller pieces. Dice the chicken breast into bite-sized pieces. Chop the onion, mince the garlic, and grate the ginger. Diced tomato and chili are prepared next, followed by peeling and cubing the taro root.
Cooking Instructions
Step 2: Cook the Taro
In a large pot, bring water to a boil and add the cubed taro root. Let it cook until tender, which should take approximately 15-20 minutes. Once cooked, drain and set aside.
Step 3: Saute the Aromatics
In a separate large pan, heat a tablespoon of oil over medium heat. Add the chopped onion and cook until translucent. Stir in the minced garlic and grated ginger, cooking for another 2 minutes until fragrant.
Step 4: Cook the Chicken
Add the diced chicken to the pan with the aromatics. Sauté until the chicken is browned and cooked through, which should take around 5-7 minutes.
Step 5: Add Tomatoes and Chili
Introduce the diced tomato and chili pepper into the pan. Cook for another 3 minutes to allow the tomatoes to soften and flavors to meld.
Step 6: Incorporate Aibika and Coconut
Stir in the prepared aibika leaves. Once they begin to wilt, pour in the coconut milk. Add the cooked taro and stir well to combine all ingredients. Season with salt and black pepper to taste.
Cooking Time and Simmer
Allow the mixture to simmer gently for approximately 15 minutes. This step enhances the flavors and ensures all ingredients are well-cooked. [Set a cooking timer].
Serving Suggestions
Once cooked, remove from heat and stir in lime juice. Garnish with freshly chopped coriander leaves. Serve the Aibika Tumunu hot, accompanied by steamed rice or any grain of your choice.
