Akub Sai

Akub Sai is a traditional dish hailing from the heartland, known for its unique blend of spices and flavors that captivate the senses. Ingredients

• Coconut Milk - 2 cups
• Chicken (preferably thighs) - 1 kg
• Green Chilies - 2 pieces
• Lime Leaves - 4 to 5
• Lemongrass - 2 stalks
• Turmeric Powder - 1 teaspoon
• Garlic - 4 cloves, minced
• Ginger - 1 tablespoon, grated
• Coriander Leaves - 1/4 cup, chopped
• Salt - to taste
• Black Pepper - 1/2 teaspoon

Preparation

Step 1: Preparing the Chicken

Start by cleaning the chicken thoroughly. Pat it dry with a paper towel and cut it into serving-size pieces. Ensure that the pieces are uniform in size for even cooking.

Step 2: Marinating the Chicken

In a large bowl, combine the turmeric powder, a pinch of salt, half of the minced garlic, and grated ginger. Add the chicken pieces to the bowl and mix well, ensuring that each piece is coated with the marinade. Cover and refrigerate for at least an hour.

Cooking Process

Step 1: Sautéing Aromatics

In a large skillet or wok, heat some oil over medium heat. Add the remaining minced garlic and sauté until it becomes fragrant. Follow this by adding finely chopped lemongrass and green chilies. Continue to sauté for a few minutes until the oil is infused with the flavors.

Step 2: Cooking the Chicken

Add the marinated chicken to the skillet. Stir well and cook until the exterior of the chicken loses its pink color. This should take about 5 to 7 minutes.

Step 3: Simmering with Coconut Milk

Pour in the coconut milk and add the torn lime leaves. Reduce the heat to low and let it simmer for about 25 to 30 minutes. Make sure to stir occasionally to prevent the sauce from sticking at the bottom.

As the dish nears completion, add the chopped coriander leaves. Season with salt and black pepper to taste. Simmer for another 5 minutes before taking it off the heat.
