Akub Sai
Akub Sai is a traditional dish hailing from the heartland, known for its unique blend of spices and flavors that captivate the senses. Ingredients
- Coconut Milk - 2 cups
- Chicken (preferably thighs) - 1 kg
- Green Chilies - 2 pieces

- Turmeric Powder - 1 teaspoon
- Garlic - 4 cloves, minced
- Ginger - 1 tablespoon, grated
- Coriander Leaves - 1/4 cup, chopped

- Black Pepper - 1/2 teaspoon
Preparation
Step 1: Preparing the Chicken
Start by cleaning the chicken thoroughly. Pat it dry with a paper towel and cut it into serving-size pieces. Ensure that the pieces are uniform in size for even cooking.
Step 2: Marinating the Chicken
In a large bowl, combine the turmeric powder, a pinch of salt, half of the minced garlic, and grated ginger. Add the chicken pieces to the bowl and mix well, ensuring that each piece is coated with the marinade. Cover and refrigerate for at least an hour.
Cooking Process
Step 1: Sautéing Aromatics
In a large skillet or wok, heat some oil over medium heat. Add the remaining minced garlic and sauté until it becomes fragrant. Follow this by adding finely chopped lemongrass and green chilies. Continue to sauté for a few minutes until the oil is infused with the flavors.
