Arabesque Mint Zaalouk
Mint Zaalouk, a classic dish rooted in Moroccan cuisine, is a refreshingly delightful eggplant and tomato salad with a hint of mint. Ingredients
- Eggplant - 2 large
- Tomatoes - 4 medium, ripe
- Garlic - 4 cloves

- Ground Cumin - 1 teaspoon
- Paprika - 1 teaspoon

Preparation
- Begin by washing the eggplants thoroughly. Pat them dry with a clean towel.
- Roast the eggplants over an open flame or in a preheated oven at 400°F until the skin is charred and the insides are soft for about 20-25 minutes. Use a cooking timer to monitor the process.
- While the eggplant is roasting, bring a pot of water to a boil. Score a cross on the bottom of each tomato and blanch them in boiling water for 30 seconds. Remove and peel off the skin.
- Chop the peeled tomatoes into small cubes, making sure to remove as many seeds as possible for a smoother texture.
- Mince the garlic cloves finely.
Cooking Process
- In a large skillet, heat the olive oil over medium heat. Once hot, add the minced garlic and sauté until golden brown.
- Stir in the chopped tomatoes, ground cumin, and paprika. Cook this mixture until the tomatoes break down into a sauce, about 10 minutes.
- Once the eggplants are cool enough to handle, peel off the charred skin. Mash the soft flesh with a fork or a potato masher.
- Add the mashed eggplant to the skillet with the tomato mixture. Stir well to combine all ingredients thoroughly.
- Season with salt, black pepper, and a splash of lemon juice to taste. The mixture should be thick and well-integrated.
- Cook for another 5-10 minutes, stirring occasionally, until excess moisture evaporates, ensuring the zaalouk is nicely thickened.
