Awara Bon Goût
Awara Bon Goût, also known as spiced tofu, is a traditional West African dish that blends the creamy texture of tofu with a delightful array of spices. This dish highlights the culinary fusion of African and Asian influences and has been adapted over generations to suit the local palate, particularly in the regions of Benin and Togo. Ingredients
- Tofu - 500g, firm
- Coconut oil - 3 tbsp
- Garlic - 4 cloves, minced
- Ginger - 1 tbsp, grated
- Cumin - 1 tsp
- Coriander - 1 tsp
- Turmeric - 1/2 tsp
- Smoked paprika - 1/2 tsp
- Fresh coriander - 1/4 cup, chopped
- Lemon - 1, juiced
- Onion - 1, finely chopped
- Capsicum - 1, red, sliced
- Salt - to taste
- Black pepper - to taste
Preparation
Preparing the Tofu
Begin by draining and pressing the tofu to remove excess moisture. This step is crucial for achieving the desired firmness and texture when cooking. Cut the tofu into cubes roughly 2cm each side.
Marinating
In a bowl, mix together the garlic, ginger, cumin, coriander, turmeric, and smoked paprika. Add the lemon juice and stir well to form a paste. Gently fold the cubes of tofu into this mixture, ensuring each piece is coated evenly. Allow it to marinate for at least 30 minutes in the refrigerator to soak in the flavors. Consider setting a timer to keep track of the marination period.
Cooking Process
Heat coconut oil in a large frying pan over medium heat. Add the onion and sauté until it becomes translucent. Incorporate the capsicum and cook until they soften.
Add the marinated tofu to the pan, preserving the remaining marinade for basting. Cook the tofu on all sides until it gains a rich golden brown color. Occasionally stir gently to prevent sticking.
Pour the remaining marinade over the cooking tofu, lower the heat, cover, and let simmer for approximately 10 minutes, or until the flavors meld perfectly. Be sure to set a timer to avoid overcooking.
Serving Suggestions
Garnish with the freshly chopped coriander and serve hot. Awara Bon Goût pairs excellently with a side of steamed rice or warm flatbread. Add a fresh green salad to complement the spiced richness of the tofu and enjoy the melding flavors.
