Introduction
Banana Kokomeri is a delightful and unique dessert originating from the tropical regions, notably known for its combination of sweet bananas and the rich taste of coconut. The recipe blends traditional flavors with modern culinary techniques to create a soffluffed, indulgent dish that those with a sweet tooth will undoubtedly appreciate. Banana Kokomeri can be traced back to early islander cuisine where locals made use of harbored fruits and native ingredients to concoct sweet dishes as a closure to their meals.
Ingredients
- Bananas - 4 ripe
- Coconut Milk - 1 cup
- Sugar - 1/2 cup
- Vanilla Extract - 1 teaspoon
- Panela or Jaggery - 1/4 cup grated
- Cinnamon Powder - 1/2 teaspoon
- Nutmeg - a pinch
- Rice Flour - 2 tablespoons
- Water - 1/4 cup
- Butter - for greasing
- Coconut Flakes - toasted, for garnish
Instructions
Preparation
Start by peeling the bananas and slicing them into thin rounds. Set aside in a bowl.
In a small saucepan, heat water and dissolve the grated panela or jaggery. Stir until fully melted and forms a syrup. Remove from heat.
In a large mixing bowl, combine the coconut milk, sugar, and vanilla extract. Mix until sugar is completely dissolved.
Cooking Process
Preheat your oven to 350°F (180°C) and grease a baking dish with butter.
Incorporate the sliced bananas into the coconut milk mixture and stir well, ensuring all banana slices are coated.
Slowly add the rice flour, cinnamon powder, and nutmeg, mixing continuously until the batter is smooth, with no lumps.
Pour the mixture into the prepared baking dish. Drizzle the panela syrup over the top, using a spatula to even it out.
Place the baking dish in the preheated oven and set the cooking timer for 45 minutes or until the top turns golden brown and a toothpick inserted comes out clean.
Once baked, remove from oven, and allow to cool for at least 10 minutes before serving.
