Chancletas are a wonderful way to showcase the versatile chayote; they combine this succulent vegetable with spices, breadcrumbs, and cheese into an irresistible baked delight. Preparation

  1. Start by washing the chayotes thoroughly. Slice them in half lengthwise and remove the seed.
  2. Bring a pot of water to a boil, then add the chayote halves. Simmer until they are tender, which takes around 15-20 minutes.
  3. Preheat your oven to 375°F (190°C).
  4. Once cooked, scoop out the flesh of each chayote with a spoon, leaving about 1/4 inch of the shell intact. Place the shells aside as you will fill them later.

Filling

  1. In a pan, melt butter over medium heat. Add chopped onion and minced garlic, cooking until they turn translucent.
  2. Add the scooped-out chayote flesh to the mixture and cook for another 5 minutes.
  3. In a large mixing bowl, combine the cooked mixture with breadcrumbs, grated cheese, and a beaten egg. Stir in salt and pepper to taste, and mix thoroughly until all ingredients are well-incorporated.
  4. Add chopped parsley for added flavor and color.

Assembly

  1. Fill each chayote shell with the mixture, mounding it slightly. Ensure that the stuffing is compact and even.
  2. Arrange the filled chayotes on a baking sheet.
  3. Place in the preheated oven, and bake for 25-30 minutes, or until the tops are golden brown and crispy.

Serving

  1. Remove from the oven and let them cool for a few minutes before serving.
  2. Garnish with additional parsley if desired.
