- Sweet potato - 1 large, peeled and diced
- Red onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Coriander - 2 tablespoons, chopped
- Cumin - 1 teaspoon
- Coriander spice - 1 teaspoon
- Sea salt - to taste
- Black pepper - to taste
- Olive oil - 2 tablespoons
- Lime - juice of 1
- Spinach - 2 cups, fresh
- Flour - 1 tablespoon, for binding
- Avocado - 1, sliced, for serving
- Yogurt - 1/2 cup, optional for serving
Preparation
