The cassava, also known as manioc or yuca, is a root vegetable that has been a staple in numerous cultures for centuries. Ingredients
- Cassava - 500g
- Olive Oil - 2 tablespoons

- Spring Onions, chopped - 2 tablespoons
Preparation
Preparing the Cassava
The first step involves selecting fresh cassava roots, which should be firm and free of blemishes. Carefully peel the cassava roots using a sharp knife, removing all the skin and the layer beneath. Rinse thoroughly under water to remove any toxins present in the skin and outer layers.
Boiling the Cassava
Cut the peeled cassava into manageable chunks and place them into a large pot of water. Boil for about 15-20 minutes, until the cassava becomes fork-tender.
While boiling, pay careful attention to the cooking time to avoid overcooking, which can cause the cassava to disintegrate.
Mashing the Cassava
Once cooked, drain the cassava and transfer to a large mixing bowl. Using a fork or potato masher, mash the cassava until smooth. Add salt, pepper, and garlic powder to the mixture, stirring to combine evenly.
