Background and History
Chichilo Verde is a traditional dish from the Oaxaca region of Mexico, known for its rich and diverse culinary heritage. As one of the seven famous moles of Oaxaca, chichilo stands out for its savory and slightly smoky flavor profile. Ingredients
- Chicken (about 3 pounds, cut into pieces)
- Green chilies (4 large, roasted and peeled)
- Cilantro (1 bunch, chopped)
- Epazote (1 small bunch, chopped)
- Tomatillos (5, husked and rinsed)
- Garlic (4 cloves)
- Onion (1 large)
- Cumin (1 teaspoon)
- Oregano (1 teaspoon)
- Lard or vegetable oil (2 tablespoons)
- Salt (to taste)
- Pepper (to taste)
- Water or chicken broth (2 quarts)
Preparation
Step 1: Prepare the Chicken
Begin by cutting the chicken into individual pieces, ensuring they are clean and free of excess fat. Season with salt and pepper.
Step 2: Roast the Green Chilies
Roast the green chilies over an open flame until the skin is charred. Once roasted, place them in a plastic bag to sweat for about 10 minutes, then peel, seed, and chop them.
Step 3: Prepare the Tomatillos
Husk and rinse the tomatillos, then cut them in half. Place them in a saucepan with a small amount of water and bring to a boil. Simmer until they are soft.
Cooking Process
Step 4: Make the Sauce
In a blender, combine the roasted chilies, cooked tomatillos, cilantro, epazote, 4 cloves of garlic, and 1 chopped onion. Add 1 teaspoon of cumin and 1 teaspoon of oregano. Blend until smooth.
Step 5: Simmer the Mixture
In a large pot, heat 2 tablespoons of lard or vegetable oil. Pour the green sauce into the pot and cook on medium heat for approximately 15 minutes, allowing the flavors to meld. Be sure to stir often to prevent sticking.
Step 6: Cook the Chicken
Add the chicken pieces to the pot, then add 2 quarts of water or chicken broth. Bring to a boil, then reduce heat to low and cover. Allow the chicken to cook through, about 1 to 2 hours, until the meat is tender and infused with the sauce. You can use this cooking timer to help manage the cooking time.
