Ingredients
- Duck Breast - 400g
- Pastry Dough - 300g
- Fresh Thyme - 1 bunch
- Garlic - 3 cloves, minced
- Onion - 1 large, finely chopped
- Butter - 50g
- Heavy Cream - 200ml
- Eggs - 2
- Salt - to taste
- Black Pepper - to taste
- Red Wine - 100ml
- Button Mushrooms - 100g, sliced
- Lemon - 1, juiced
- Fresh Parsley - for garnish
Preparation
1. Preparing the Duck
Start by seasoning the duck breast with salt and black pepper on both sides. In a pan over medium heat, melt the butter and add the duck skin-side down. Sear until golden brown, then flip and cook the other side for about 3 minutes. Remove from the pan and set aside.
2. Creating the Filling
In the same pan, add the minced garlic and onion. Cook until translucent. Add the button mushrooms and sauté until they release their moisture. Pour in the red wine and let it reduce by half. Stir in the chopped thyme and season with salt and black pepper.
3. Assembling the Tart
Roll out the pastry dough and line a tart pan with it. Prick the base with a fork. Slice the seared duck breast thinly and layer it onto the base. Pour the mushroom and onion mixture over the top.
4. Preparing the Custard
In a bowl, whisk together the heavy cream, eggs, a pinch of salt, and black pepper, along with a squeeze of lemon. Pour this mixture over the layered fillings in the tart.
5. Baking
Preheat your oven to 180°C (350°F). Place the tart in the oven and bake for 25-30 minutes or until the custard is set and the top is golden brown. Use a cooking timer to ensure precise baking time.
