Ingredients

  • rice (short- or medium-grain; about 2 cups for four servings)
  • water (enough for the absorption method)
  • salt (a small pinch)
  • coconut (fresh, finely grated; or unsweetened dried)
  • sugar (optional, for a lightly sweet finish)

Equipment

  • Heavy pot with snug lid
  • Fine-mesh strainer
  • Mixing bowl and shallow dish
  • Wooden spoon or paddle
  • Clean kitchen towel

Preparation

  1. Rinse the rice under cool water until the runoff looks clearer.
  2. Combine the drained rice, measured water, and a small pinch of salt in a heavy pot with a tight lid.
  3. Bring to a gentle simmer, cover, and cook over low heat until the liquid is absorbed and the grains are tender and sticky. Remove from the heat and keep covered to rest.
  4. Spread the hot rice on a wide plate for a brief moment so excess moisture steams off, then gather it back into the pot to stay warm.
  5. Set a shallow dish with the coconut beside your work area.
  6. Dampen clean hands with a little water. Scoop a heaping tablespoon of warm rice, compress it firmly between your palms, and shape into compact balls.
  7. Roll each ball in the coconut until coated all over.
  8. For a lightly sweet version, sprinkle a pinch of sugar over the coating, or mix a little sugar into the coconut before rolling.

Tips

  • If the mixture feels too firm, moisten your palms with more water and pack each piece a bit more gently.
  • For a nutty aroma, briefly toast the coconut in a dry pan, then cool before coating; a tiny extra pinch of salt can balance sweetness if you used sugar.

Storage
