- Cayenne pepper - 1 tsp
- Salt - 2 tsp
- Black pepper - 1 tsp
- Olive oil - 3 tbsp
- Garlic cloves, minced - 5
- Onion, diced - 1 large

- Honey - 2 tbsp
- Soy sauce - 1/4 cup
- Apple cider vinegar - 2 tbsp
Additional Ingredients
- Bell peppers, sliced - 2
- Pineapple chunks - 1 cup
- Cilantro, chopped - for garnish
Preparation
Step 1: Marinade the Pork
In a large mixing bowl, combine orange juice, lime juice, honey, soy sauce, and apple cider vinegar. Whisk until all ingredients are well-blended. Add the pork shoulder to the marinade, ensuring it is fully submerged. Cover the bowl with plastic wrap and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to deeply penetrate the meat.
Step 2: Season the Pork
Remove the pork from the marinade and pat it dry with paper towels. In a small bowl, mix together chili powder, cumin, cayenne pepper, salt, and black pepper. Rub this seasoning mixture thoroughly over the pork, making sure to coat all sides.
Step 3: Sear the Pork
Heat olive oil in a large heavy-based pan over high heat. Add the seasoned pork and sear on all sides until a brown crust forms, about 3-4 minutes per side. This step locks in the juices of the meat, which is essential for the tender, succulent end result.
Cooking Process
Step 4: Slow Cook the Pork
Transfer the seared pork to a slow cooker. Add the remaining marinade, garlic, diced onion, sliced bell peppers, and pineapple chunks to the cooker. Cover and cook on low for 6-8 hours, or until the pork is fork-tender. Alternatively, this can be cooked in a conventional oven at 300°F for the same duration.
Step 5: Finishing Touches
Once the cooking is complete, remove the pork from the slow cooker. Use two forks to shred the meat, then return it to the cooker to absorb the juices for an additional 15 minutes. Before serving, sprinkle with freshly chopped cilantro.
