Ingredients
- Crab - 2 large fresh crabs

Preparation
Preparing the Crab
Begin by cleaning the crabs thoroughly under running water. Use a brush to remove any dirt or sand on the surface. Remove the gills and guts, then cut each crab into manageable pieces. Crack the claws slightly to allow the douchi sauce to seep in during cooking.
Preparing the Sauce
In a small bowl, combine the soy sauce, rice vinegar, and sugar. Stir until the sugar is dissolved. Set aside.
Cooking Process
Stir-Frying the Ingredients
Heat a wok over medium-high heat and add the vegetable oil. Once hot, add the garlic and ginger, stirring quickly to prevent burning. Add the douchi and stir-fry for about 30 seconds until aromatic.
Cooking the Crab
Add the prepared crab pieces to the wok. Stir-fry the crab with the aromatics for about 5 minutes, allowing it to absorb the flavors of the douchi, garlic, and ginger.
Simmering in Sauce
