Preparation
Making the Dough
- In a large mixing bowl, combine the flour and a pinch of salt.
- Add the butter and mix until the mixture resembles coarse breadcrumbs.
- Gradually add water, kneading continuously until a smooth, elastic dough forms. Cover and let it rest for at least 30 minutes.
Preparing the Filling
- Peel and finely chop the onions and potato.
- In a large pan over medium heat, add olive oil and sauté the onions until translucent.
- Add the beef and cook until browned.
- Stir in the potato, paprika, cumin, and chili flakes, and season with salt and black pepper to taste.
- Cook until the potato is tender and the flavors are well combined. Let it cool.
Assembling the Empanadas
- Preheat your oven to 375°F (190°C).
- Roll the rested dough on a floured surface to about 1/8 inch thickness and cut into circles (approximately 5 inches in diameter).
- Spoon the cooled filling onto one half of each dough circle, leaving space around the edges.
- Beat the egg and brush it around the edges to help seal.
- Fold the dough over the filling to form a half-moon shape. Press the edges together tightly, sealing them by crimping with a fork or creating a repulgue (decorative twist).
- Place the empanadas on a baking sheet lined with parchment paper.
- Brush the tops with the remaining egg wash for a golden finish.
Cooking Process
