Fiji Citrus Prawns
History of Fiji Citrus Prawns
Fiji Citrus Prawns is a vibrant and flavorful dish inspired by the bountiful seafood and fresh produce found in the islands of Fiji. The recipe marries the pristine catch of prawns with the zesty brightness of citrus fruit, creating a delightful fusion perfect for tropical climates. Traditionally, seafood has been a staple in Fijian cuisine, with local ingredients being celebrated for their freshness and simplicity. Over time, the introduction of various citrus fruits has added a dynamic twist, enhancing the naturally sweet and savory flavors of the prawns.
Ingredients
- Prawns - 500g, peeled and deveined
- Lime - 2, juiced
- Orange - 1, juiced
- Garlic - 3 cloves, minced
- Ginger - 1 inch piece, grated
- Chili - 1, finely sliced
- Coconut Milk - 200ml
- Soy Sauce - 2 tablespoons
- Coriander - A handful, chopped
- Olive Oil - 2 tablespoons
- Salt - to taste
- Pepper - to taste
Preparation
Begin by thoroughly cleaning the prawns. Ensure they are peeled and deveined to prevent any gritty texture. Once cleaned, pat them dry with a paper towel.
In a bowl, whisk together the juice of two limes, juice of one orange, minced garlic, grated ginger, and sliced chili. This will be used as a marinade. Place the prawns into the marinade, ensuring they are fully coated. Cover and refrigerate for at least 30 minutes, allowing the flavors to infuse.
Cooking Process
Once the prawns have marinated, heat the olive oil in a large skillet over medium heat. Remove the prawns from the marinade and add them to the skillet, cooking for about 2-3 minutes on each side or until they turn pink and opaque.
Remove the prawns from the skillet and set aside. In the same skillet, pour in the remaining marinade along with coconut milk and soy sauce. Stir the mixture and bring it to a simmer. Allow it to reduce slightly for about 5 minutes.
Return the cooked prawns to the skillet to coat them with the sauce. Season with salt and pepper to taste, and garnish with freshly chopped coriander.
For accurate cooking timing, use a cooking timer to ensure the prawns are perfectly cooked.
How to Enjoy
Fiji Citrus Prawns are best served hot, as the warmth accentuates the aromatic citrus and garlic notes. They pair exceptionally well with steamed rice or a fresh green salad, complementing the rich and spicy sauce. Squeeze additional lime juice over the prawns just before serving to elevate the citrusy freshness.
