Ingredients
- Jackfruit - 1 kg, young and peeled
- Coconut milk - 800 ml
- Palm sugar - 150 grams, grated
- Bay leaf - 3 leaves

- Galangal - 2 cm, bruised
- Salt - 1 teaspoon
- Water - as needed
- Shallots - 8 cloves, finely chopped
- Garlic - 5 cloves, finely chopped
- Coriander seeds - 1 teaspoon
- Krecek (dried beef skin) - 150 grams
- Red chilies - 10 pieces, chopped
- Oil - for sautéing
Preparation Steps
Prepare the Jackfruit
Clean and cut the jackfruit into bite-sized pieces. It is important to remove the seeds and core to ensure the dish’s smooth consistency.
Blend the Spices
Using a blender or mortar and pestle, blend the shallots, garlic, and coriander seeds into a smooth paste.
Brine the Krecek
Soak the krecek in hot water for around 15 minutes to soften it. Drain and set aside for later use in the cooking process.
Cooking Instructions
Cook the Jackfruit
In a large pot, sauté the blended spice paste in oil for about 5 minutes or until fragrant. Add the prepared jackfruit and mix well. Pour in the coconut milk and add the next ingredients: palm sugar, bay leaves, lemongrass, and galangal. Stir and bring the mixture to a boil.
Simmer the Gudeg
Reduce the heat to low, cover the pot, and let it cook for about 2 to 3 hours. Stir occasionally, adding water if necessary, to prevent it from drying out. Cook until the jackfruit is tender and soaked in a rich, sweet caramelly sauce.
Prepare the Krecek
In another pan, heat some oil and fry the chopped red chilies. Add the previously softened krecek and sauté for a few minutes. Add a little bit of water and cook until the krecek is tender.
Combine the Gudeg and Krecek
Once both the gudeg and krecek are ready, mix them together carefully to ensure all the flavors meld well together. Cook for an additional 10 minutes.
