Guyanese Pepperpot is a traditional stew that is steeped in history and culture. Ingredients for Guyanese Pepperpot
- Beef - 2 pounds, ideally brisket or stew meat
- Pork - 1 pound, shoulder or trotters
- Oxtail - 1 pound, cut into pieces
- Cassareep - 1 cup
- Cinnamon - 1 stick
- Cloves - 6 whole
- Brown Sugar - 2 tablespoons
- Garlic - 4 cloves, minced
- Thyme - 2 sprigs
- Wiri Wiri Pepper - 5 whole
- Salt - to taste
- Water - as needed
Preparation Steps
- Start by washing the beef, pork, and oxtail. Pat them dry with paper towels.
- In a large pot, combine all the meats.
- Add enough water to cover the meats, then bring to a boil.
- Let it boil for 10 minutes, then reduce to a simmer and skim off any scum that rises to the top.
Cooking Process for Guyanese Pepperpot
Step 1: Combining the Ingredients
Add the cassareep to the simmering pot, stirring well. Follow with the cinnamon stick, cloves, brown sugar, and garlic. Ensure all ingredients are well mixed with the meats.
Step 2: Simmer
Cover the pot and let it simmer gently for about three hours, or until the meats are tender. Be sure to check occasionally and add more water as necessary to keep the ingredients covered.
Step 3: Final Seasoning
Add the thyme and wiri wiri peppers whole, allowing them to infuse for the last hour of cooking. Season with salt to taste.
Note: The cassareep acts as a preservative, so the pepperpot can be kept at room temperature and reheated over several days; in fact, it is traditionally said to taste even better as it ages.
