Step 1: Preparing the Pastry

Step 2: Pre-baking the Pastry

Place the prepared pastry case in the refrigerator for 30 minutes to chill. Preheat your oven to 200°C (180°C fan or gas mark 6).

Line the pastry with baking paper and fill with baking beans or rice. Bake blind for 10 minutes. Remove the baking beans and paper, and continue to bake for a further 5 minutes until the pastry is golden and dry.
