Hangzhou Plum
Background and History
Hangzhou Plum Sauce is a traditional dish originating from the rich culinary heritage of Hangzhou, China. Known for its exquisite balance of sweet and sour flavors, it captures the essence of Zhejiang cuisine. Historically, plums were utilized not only for their flavor but also for their nutritional benefits, as ancient Hangzhou residents believed in the plum’s capability to enhance digestion and vitality. The plum sauce was often served with duck, chicken, or as a condiment for various snacks, symbolizing prosperity and abundance in Chinese culture.
Ingredients
Preparation
Wash the plums thoroughly under running water. Cut them into halves, removing the pits carefully. Dice the garlic and ginger into fine pieces. If you like your sauce to have a bit of heat, slice the red chilies thinly.
Cooking Process
- In a large saucepan, combine the pitted plums, sugar, rice vinegar, soy sauce, diced garlic, diced ginger, and star anise.
- Add water to the saucepan until the plums are just covered.
- Bring the mixture to a gentle boil, stirring occasionally to dissolve the sugar.
- Once boiling, reduce the heat and let the mixture simmer. Stir occasionally to prevent sticking to the bottom of the pan. Continue simmering until the plums are soft and breaking apart, approximately 45-60 minutes.
- If a smooth texture is desired, use an immersion blender to purée the mixture until smooth. If you prefer a chunkier sauce, skip this step.
- Season the sauce with salt to taste, and add the optional sliced red chilies at this stage if you like some heat.
- Let the sauce cool before transferring to sterilized jars for storage. The sauce should thicken further as it cools. Seal the jars and store them in a cool, dark place.
