Preparation
Begin by washing and peeling the potatoes. Boil them in a large pot until they are fork-tender, then drain and set aside to cool. Cut into cubes once cooled.
Preparing the Fish
Meanwhile, season the fish with salt and pepper. Heat a pan with olive oil, and cook the fish on both sides until golden brown and cooked through, approximately 4-5 minutes per side depending on thickness.
Remove the fish from the pan and set aside. Once cooled, flake the fish with a fork into bite-sized pieces.

Sprinkle the top with freshly chopped parsley and zest of a lemon for added freshness. Drizzle lightly with olive oil.
